How to make vegetarian Mexican Rice | Spicy Rice | Quick & easy Mexican Rice |

Fusion style Mexican rice. Perfect for a dinner or party. Quick, Easy one pot meal.

Ingredients

2 tbsp Olive oil
1-1/2 cup Rice
1/2 cup Onion Diced
1 tbsp Garlic minced
2 tsp Oregano
to taste salt
1 tsp Pepper
1 tsp Cumin powder
1-1/2 tsp Chili flakes
1 tsp Paprika
2 tbsp Sweet Corn
1/2 cup Tomato dices
1/2 cup Kidney beans boiled
1/2 cup Tomato Pure
2 tbsp Tomato chili sauce
3 cups Water
1 cup Colour pepper
few Broccoli florets

Method.
1. In a large pot heat oil and add rice and roast it till it turns golden .
2. add onion garlic and corn and cook for a minute
3. add all spices spices and mix it will .
4. now add tomato pure and chilli sauce and cook for 3-4 minutes
5. add beans and water and cook fir 3-4 minutes
6. now add pepper broccoli and cook till water evaporates
7. Serve hot.
