New Mexican Food- Sopapilla

Chef David makes New Mexican food at his Southwest Las Vegas restaurant. In this cooking video David explains the story behind New Mexican food. When you go into this type of restaurant you are asked “Red or Green”….meaning red or green peppers. Chef David makes sopapilla stuffed with pork that is marinated in red chile then cooked in the same chile. It’s then covered with red and green chile, making it Christmas style.
