Tacos de Chicharron y Nopales
You will need some Pork Rinds (Chicharron) and some fresh Cactus with the thorns removed and cut into squares.
Oil your griddle or pan and place your cactus, season with salt and pepper. Allow the cactus to cook to where it is nicely tender and have a crispy exterior.
Place your Pork Rinds over some oil and poor some chicken broth over. Allow the Pork rinds to re-hydrate, this takes a few minutes for the liquids to be absorbed. Once the broth is soaked, pour down some tomato sauce or tomato hot sauce. I used El Pato sauce, its a canned tomato hot sauce that is great for breakfast and tacos.
Once the Pork Rinds are cooked to the tenderness, remove from heat. Build your taco with the toppings you like. I love Queso Fresco (Fresh Cheese) and re fried beans. Also like grandma did, two eggs sunny side up. Build it how you like it, just make sure its make with love.
